Mini Mint Chocolate Chip Cookies
Ingredients
1 cup unsalted butter, softened
1½ cups brown sugar
½ cup white sugar
1 teaspoon vanilla extract
1 egg + 1 egg yolk
¾ cup cocoa powder
¼ cup dark cocoa powder
1½ cups all-purpose flour
1 cup mini mint chocolate chips
1 whole bar of dark chocolate, chopped
Instructions
Make the dough
In a large bowl, cream together the softened butter, brown sugar, and white sugar until smooth.
Mix in the vanilla, egg, and egg yolk.
Add the cocoa powders and flour, mixing until fully combined.
Fold in the mini mint chips and chopped dark chocolate.Shape the cookies
Form the dough into mini cookie shapes (about 1–1.5 teaspoons each) and place them on a tray.Chill
Place the cookies in the fridge for 10 minutes to firm up.Bake
Preheat the oven to 360°F (182°C). Bake the cookies for 10 minutes.Cool and serve
Let the cookies cool for about 10 minutes before enjoying.
Store leftovers in an airtight container for future treats.
Tips
Using mini mint chips gives each cookie bursts of minty flavor.
Chilling the dough helps the cookies keep their shape while baking.
You can drizzle extra melted dark chocolate on top for a fancy touch.
