Blueberry Sourdough

Dough:

  • 1 cup sourdough starter

  • 1 cup warm water

  • 1 tablespoon honey

  • 4 cups flour

  • 1 tablespoon + 1/4 teaspoon salt

  • 1 cup of fresh blueberries

  • 3 tablespoons olive oil

Instructions:

  1. Prepare the dough the day before. Mix the sourdough starter, warm water, honey, flour, salt, blueberries , and olive oil in a bowl.

  2. Every few hours, mix the dough by layering it (folding it over itself) up to 3 times.

  3. Once the dough doubles in size, shape it into a loaf and place it in a pan.

  4. Cover the pan and refrigerate overnight.

Baking:

  1. Preheat the oven to 400°F.

  2. Bake the dough covered for 25 minutes, then uncover and bake for an additional 5 minutes.

  3. Once done, remove the bread from the pan and let it cool completely before slicing
