Gluten-Free Cranberry Rice Cookies
These soft, buttery cookies are made with rice flour and real cranberries, giving them a light texture and natural sweetness. They are simple to make, gluten-free, and perfect for gifting or enjoying with tea or coffee.
Ingredients:
1 stick butter, softened
1 egg
1 cup powdered sugar
1 teaspoon vanilla
2 cups rice flour
1 cup dried cranberries
Instructions:
In a mixing bowl, beat together the butter, egg, powdered sugar, and vanilla for 2 minutes.
Add the rice flour and cranberries, and mix until a dough forms.
Place the dough in the refrigerator for 10 minutes to chill.
Shape or cut the dough into cookies and place on a baking sheet.
Bake at 360°F for 20 minutes.
Remove from the oven and allow the cookies to cool completely before serving.
Notes:
Makes approximately 24 cookies.
Cookies will firm up as they cool.
