Gluten-Free Cranberry Rice Cookies

These soft, buttery cookies are made with rice flour and real cranberries, giving them a light texture and natural sweetness. They are simple to make, gluten-free, and perfect for gifting or enjoying with tea or coffee.

Ingredients:

  • 1 stick butter, softened

  • 1 egg

  • 1 cup powdered sugar

  • 1 teaspoon vanilla

  • 2 cups rice flour

  • 1 cup dried cranberries

Instructions:

  1. In a mixing bowl, beat together the butter, egg, powdered sugar, and vanilla for 2 minutes.

  2. Add the rice flour and cranberries, and mix until a dough forms.

  3. Place the dough in the refrigerator for 10 minutes to chill.

  4. Shape or cut the dough into cookies and place on a baking sheet.

  5. Bake at 360°F for 20 minutes.

  6. Remove from the oven and allow the cookies to cool completely before serving.
