Chocolate Biscotti

Ingredients

Biscotti

  • 1 stick (½ cup) butter, room temperature

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 cup sugar

  • 1 cup almond flour

  • 1 cup all-purpose flour

  • ½ cup dark cocoa powder

  • ¾ tablespoon baking powder

  • Pinch of salt

  • ½ cup pistachios, roughly chopped

  • ½ cup sliced or shredded almonds

  • ½ cup chocolate chips

Chocolate Coating

  • 1 bar dark chocolate

  • 1 tablespoon coconut oil

  • 2 tablespoons crushed pistachios (for topping)

Instructions

  1. Preheat the oven
    Preheat oven to 360°F (182°C). Line a baking sheet with parchment paper.

  2. Mix wet ingredients
    In a large bowl, combine the butter, sugar, eggs, and vanilla extract. Mix until smooth and well combined.

  3. Combine dry ingredients
    In a separate bowl, whisk together the almond flour, all-purpose flour, cocoa powder, baking powder, and salt.

  4. Make the dough
    Gradually add the dry ingredients to the wet ingredients. Mix with a spatula until a thick dough forms.

  5. Add mix-ins
    Fold in the pistachios, almonds, and chocolate chips until evenly distributed.

  6. Shape and first bake
    Transfer the dough to the prepared baking sheet. Shape it into a long, flat rectangle (about 1 inch thick).
    Bake for 15 minutes.

  7. Cool and slice
    Remove from the oven and let cool for 15 minutes. Using a sharp knife, cut the log into 1-inch-wide slices.

  8. Second bake (biscotti style)
    Place the slices cut-side down on the baking sheet. Bake for an additional 12 minutes, until firm.
    Remove and let cool completely.

  9. Melt the chocolate
    In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave for 1 minute, stirring until smooth.

  10. Dip and decorate
    Once the biscotti are fully cooled, dip one end of each biscotti into the melted chocolate. Sprinkle crushed pistachios on top.

  11. Set and enjoy
    Let the chocolate set completely before serving. Enjoy with coffee or tea ☕🍪
