Sourdough Focaccia

Ingredients
• 4 cups all-purpose flour
• 1 cup active sourdough starter
• 1 tablespoon honey
• 1 tablespoon salt
• ¼ cup olive oil
• 1½ cups warm water
Instructions
Make the Dough: In a large bowl, combine flour, sourdough starter, honey, salt, olive oil, and warm water. Mix until a sticky dough forms.
Bulk Fermentation: Cover the bowl and let the dough rest at room temperature for 6–8 hours, allowing it to rise. During this time, stretch and fold the dough 3 times, spaced about 1–2 hours apart.
Overnight Rest: Lightly oil the bottom and top of the dough. Cover and refrigerate overnight to develop flavor and structure.
Shape & Top: The next day, transfer the dough to a well-oiled baking pan. Gently stretch it to fit the pan. Add your favorite toppings—such as cherry tomatoes, onions, herbs, or olives.
Bake: Preheat the oven to 450°F (230°C). Bake for 25–30 minutes, or until the top is golden and crisp.
Cool & Enjoy: Let the focaccia cool slightly before slicing. Enjoy warm or at room temperature!
