Chewy Pumpkin Chocolate Chip Cookies

Ingredients

    •    2 sticks (1 cup) unsalted butter, browned

    •    1 cup brown sugar

    •    ¾ cup white sugar

    •    1 large egg

    •    1 egg yolk

    •    1 tablespoon vanilla extract

    •    1 cup fresh pumpkin purée (with excess water squeezed out)

    •    2½ cups all-purpose flour

    •    1 tablespoon baking powder

    •    ½ tablespoon baking soda

    •    ½ teaspoon pumpkin spice

    •    1 tablespoon cinnamon

    •    ½ teaspoon salt

    •    1 cup chocolate chips

    •    1 cup chopped Hershey chocolate

Instructions

  1. Preheat oven to 360°F (182°C).

  2. Brown the butter in a saucepan until golden and nutty, then let it cool slightly.

  3. In a large bowl, whisk together the brown sugar, white sugar, and browned butter until smooth.

  4. Add the egg, egg yolk, and vanilla, and mix well.

  5. Stir in the fresh pumpkin purée (make sure you’ve squeezed out the extra water so it’s thick).

  6. In another bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, cinnamon, and salt.

  7. Add the dry ingredients to the wet ingredients and mix until just combined.

  8. Fold in the chocolate chips and Hershey chocolate pieces.

  9. Scoop dough onto a lined baking sheet.

  10. Bake for 15 minutes, or until the edges are golden and the centers are soft.

  11. Let cookies cool completely before enjoying — they’ll firm up as they cool!
