Raspberry Chocolate Cake

Recipe:

Ingredients for the cake:

• 1 cup sugar

• 1 teaspoon vanilla bean

• 1/2 cup sour cream or yogurt

• 3/4 cup olive oil

• 1/2 cup whole milk

• 1 cup cocoa powder

• 1 cup flour

• 1 tablespoon baking powder

• 1 teaspoon baking soda

• 1/4 teaspoon salt

• 3 tablespoons water

Ingredients for the topping:

• 1 cup chocolate chips

• 1/2 cup heavy cream

• 1 lb fresh raspberries

• 2 tablespoons powdered sugar

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Mix all cake ingredients together until smooth.

  3. Pour into a baking pan and bake for 20–25 minutes.

  4. While the cake is cooling, prepare the topping:

  5. Microwave chocolate chips and heavy cream together for 1 minute.

  6. Let the mixture sit in the fridge for 5 minutes.

  7. Once the cake has cooled, pour the chocolate topping over it.

  8. Top with fresh raspberries and sprinkle with powdered sugar.
