Peaches Cream Brioche Cheese Buns

Ingredients

Brioche Dough

    •    1 ¼ cups whole milk

    •    2 tablespoons sugar

    •    1 tablespoon yeast

    •    1 egg

    •    1 stick (113g) butter

    •    4 ½ cups all-purpose flour

    •    2 tablespoons olive oil (for coating top and bottom of dough)

Cream Cheese Filling

    •    12 oz cream cheese

    •    1 egg

    •    1 tablespoon vanilla extract

    •    ¼ cup sugar

    •    ¼ cup sour cream

    •    1 tablespoon lemon juice

Peach Topping

    •    3 peaches, divided

    •    2 tablespoons honey

    •    1 teaspoon cinnamon

    •    ¼ cup water

Instructions

Prepare the Peaches

  1. Divide peaches into three portions.

  2. In a saucepan, combine peaches with honey, cinnamon, and water.

  3. Cook over medium heat for 5–6 minutes until softened.

  4. Peel skins off and set aside.

Make the Brioche Dough

  1. Warm the milk slightly and mix in sugar and yeast. Let it sit 5–10 minutes until frothy.

  2. In a large bowl, combine yeast mixture with egg and butter. Gradually add flour, kneading until a smooth dough forms.

  3. Lightly coat the dough with olive oil, cover, and let it rise until doubled in size.

Prepare the Cream Cheese Filling

  • Mix together cream cheese, egg, vanilla, sugar, sour cream, and lemon juice until smooth and creamy.

Assemble the Buns

  1. Divide the dough into individual portions.

  2. Flatten each portion and place a spoonful of cream cheese filling in the center.

  3. Fold the dough over the filling and seal.

  4. Place on a baking tray and top with the cooked peaches.

Bake

  1. Preheat oven to 350°F (175°C).

  2. Bake for 25–35 minutes, or until buns are golden and cooked through.

Cool & Serve

  • Let the buns cool slightly before serving. Enjoy warm for the best flavor and texture.
