Calzone

Dough Ingredients

  • 1000g bread flour (about 8 cups)

  • 2½ cups warm water (590ml)

  • 1½ tablespoons salt (27g)

  • 1 tablespoon active dry yeast (9g)

  • 2 tablespoons sugar (25g)

  • ⅓ cup extra virgin olive oil (80ml)

Beef Filling

  • 1 lb (450g) ground beef

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika

  • 1 medium onion, finely diced

  • ½ teaspoon garlic powder

  • 1 tablespoon pepper paste

  • ½ cup shredded mozzarella cheese (55g)

For Finishing

  • 1 egg yolk, beaten

  • Sesame seeds for topping

Garlic Yogurt Sauce

  • 1 cup Greek yogurt (240g)

  • 1 garlic clove, minced

  • Juice of ½ lemon

  • ¼ teaspoon salt, or to taste

  • 2 tablespoons fresh parsley, finely chopped

Instructions

Step 1: Prepare the Dough

In a large mixing bowl, combine the warm water, yeast, and sugar. Stir gently and let the mixture sit for 5–10 minutes until the yeast becomes foamy.

Add the bread flour and salt. Mix until a dough begins to form.

Pour in the olive oil and continue kneading for 8–10 minutes until the dough becomes smooth, soft, and elastic.

Step 2: Divide the Dough

Place the dough onto a lightly floured surface and divide it into approximately 20 equal portions.

Shape each piece into a smooth ball and place them on lightly oiled trays or baking sheets.

Cover with a clean kitchen towel or plastic wrap and allow them to rise at room temperature until doubled in size, about 1 to 1½ hours.

Step 3: Prepare the Beef Filling

While the dough is rising, heat a skillet over medium heat.

Add the ground beef and cook until browned.

Stir in the diced onion and cook until softened.

Add the salt, black pepper, paprika, garlic powder, and pepper paste. Cook for another 2–3 minutes, stirring well.

Remove from the heat and allow the filling to cool completely.

Once cooled, stir in the mozzarella cheese.

Step 4: Shape the Calzones

Preheat the oven to 390°F (200°C).

Roll each dough ball into a circle approximately 5–6 inches (13–15 cm) in diameter.

Place a spoonful of the beef mixture in the center of each circle.

Fold the dough over the filling to create a half-moon shape. Press the edges firmly together and crimp with a fork to seal.

Transfer the calzones to parchment-lined baking sheets.

Step 5: Finish and Bake

Brush the tops with beaten egg yolk and sprinkle generously with sesame seeds.

Bake for 25–30 minutes, or until the calzones are golden brown and beautifully crisp.

Allow them to cool for 5–10 minutes before serving.

Step 6: Make the Garlic Yogurt Sauce

In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, salt, and parsley.

Mix until smooth and creamy.

Refrigerate until ready to serve.

Serve the warm calzones with the garlic yogurt sauce on the side for dipping. These savory pastries are perfect for family dinners, gatherings, lunch boxes, or as a satisfying snack.
