Dough
• 1 cup (150 g) sourdough starter
• 1 cup warm whole milk
• ¼ cup sugar
• 2 ½ cups all-purpose flour
• 1 Tbsp ground cinnamon
• ½ Tbsp salt
Apple Filling
• 2 apples, peeled and diced
• 1 tsp cinnamon
• 1 Tbsp sugar
Topping (Glaze)
• ½ cup powdered sugar
• 4 Tbsp heavy cream
• 1 Tbsp vanilla extract
Instructions
In a large bowl, mix the sourdough starter, warm milk, sugar, flour, cinnamon, and salt until a dough forms.
Cover and let rest for 3 hours.
In a separate bowl, toss the diced apples with cinnamon and sugar.
Cover and let sit for 3 hours as well.
After resting, mix the apples into the dough until evenly distributed.
Cover again and let rise for 1 hour.
On a floured surface, roll out the dough and cut into donut shapes (or small rounds).
Heat oil in a deep pan or fryer to 350°F (175°C).
Fry the donuts in batches until golden brown, about 1–2 minutes per side.
Remove and drain on paper towels.
In a bowl, whisk together powdered sugar, heavy cream, and vanilla until smooth.
Dip warm donuts into the glaze or drizzle on top.
