Sourdough Everything Bagles

Recipe:

Serving Size: 9 large bagels or 18 medium bagels

Dough Ingredients:

• 8 cups of flour (1300g)

• 1 ½ cups of sourdough starter (250g)

• 3 ¼ cups of water (850ml)

• 2 tablespoons of salt (34g)

• 1 tablespoon of honey (20g)

Instructions:

  1. Mix all ingredients together to form a dough.

  2. Every hour for 3 hours, gently turn the dough (stretch and fold).

  3. After the final turn, let the dough rest and rise at room temperature for 6 hours.

  4. Then, cover the dough and place it in the fridge for 36 hours.

Shaping and Baking:

  1. When ready to bake, shape the dough into bagels.

  2. Bring 5 cups of water to a simmer on the stove. Once hot, add 2 tablespoons of baking soda.

  3. Boil each bagel for 30–40 seconds.

  4. Remove from water, sprinkle with everything bagel seasoning, and place on a baking tray.

  5. Bake at 420°F for 25 minutes.

  6. Let bagels cool before slicing.
